Hello! To all of my Alabama friends, I hope you’ve enjoyed your Snow Day! We got a record breaking (I think?) 8 inches. So of course we took the day and went and played!! But enough about that! On to this awesome recipe I created last night that is SO satisfying. Wait until you see how easy it is.
Have you had Gnocchi before? It’s a potato dumpling that sometimes takes the place of pasta in dishes. If you’re wanting something gluten free/paleo, then look no further!
3 Ingredient Sweet Potato Gnocchi:
- 1 large sweet potato- or about two cups once mashed
- 1 cup of Tapioca Flour
- 1/2 cup of Almond Flour
- (I also added a little salt to taste, which I guess would make this a 4 ingredient version!)
Begin by cooking the sweet potato and mashing it with a fork. I microwaved mine and then took all of the skin off and mashed it with a fork and left it to come to room temperature for a bit. If you prepare yours another way, you’ll want to make sure there is little to no moisture in the potato mash. Then, mix in the flours and salt until you have a pretty orange ball of dough!!
Section the dough and roll it into 1 inch thick sections (like a long whip or rope!) Then, cut it into bite size gnocchi pieces and give it a press with a fork to get those pretty lines in each piece! This dough will yield probably 50 or so pieces.
Traditionally, you can boil them for a few minutes until they float to the top of the water, but I wanted to try pan frying them. I heated up butter and a little olive oil and sizzled each side until golden/dark brown and crispy! These are addicting suckers and could easily just be an awesome finger food snack!! But, I ate them alongside some meaty tomato bolognese sauce!! Because, protein. 🙂
